A Perfect Day

Dan and I stayed in bed until 11:00 a.m. and in our pajamas until 4:00.
Nick had the ACT this morning and Chris of course is locked in his room (metaphorically).
Best Christmas pre-Vacation day!

By late afternoon Chris was hungry for a Great Harvest sandwich which was the impetus to change from pj's into real clothes. Otherwise we probably wouldn't have bothered. 

Made Babs' Sausage Roll for dinner with a baked brie and cranberry topping.
These pictures aren't exactly pinterest-worthy. But everything tasted so good!
Will be making again for the family during the vacation!

"Brunch with Babs" Sausage Roll
Sausage Roll: 1.5 lbs browned sausage, 1 C mozzerella cheese combined with 1/2 C parmesan.
Roll out pizza dough on square tray. 
Cover middle third with 2/3 of the sausage and top with 2/3 of cheese.
Pull one side of dough over the mixture. Top with rest of sausage and cheese.
Pull other side over and seal edges. Brush top with egg yolk.
Bake at 375* for 30 minutes or until golden.


Baked Brie
Place 8-12 oz. brie with top rind cut off in the middle of Puff Pastry square.
Make cranberry sauce--err on sweeter side--and top the brie, along with coarse chopped pecans.
Fold corners of pastry around brie. Brush with egg yolk.
Bake at 425* for 20-25 min.
(Our brie was strong, so we added honey after cooking and loved the flavor combo.)


Watched some F1 racing then "A Castle for Christmas" with Brooke Shields and
Cary Elwes, who you'll know from Princess Bride or as Pierre Despereaux from Psych.

It was VERY cheesy, the plot not especially compelling, and disturbed my writing worried that I might write something equally ridiculous which would be super embarrassing.
But the scenery in Scotland was fantastic. As were the accents.

Kind of a perfect day.
