Our zucchinis are growing so fast I can't keep up with them.
It's amazing how much they grow in a week!
I shredded some giant ones and made two double batches of zucchini bread --
enough to give to all the neighbors and then some.
I found a recipe I love:
with the following substations:
2 Cups oatmeal flour & 1 Cup whole wheat flour
1 C honey instead of 2 1/4 C sugar
3 t cinnamon + 1 t nutmeg
I've done it with all oatmeal flour and it was delicious as well.
But I'm experimenting with different textures.
